Proximity Wine Bar is bringing hyper-local food and wine to Chester County with its forthcoming Unionville location, writes Brooke Schultz for The Philadelphia Inquirer.
Owner Corey Krejcik envisioned a community-focused wine bar highlighting Pennsylvania winemakers. With the upcoming Unionville bottle shop and tasting room, located at the former Catherine’s Restaurant space, guests will soon be able to enjoy a carefully curated selection of wine, charcuterie, and artisanal bites, all in celebration of PA vendors.
All wine and food will be sourced from within a 100-mile radius. Penns Woods Winery in Chadds Ford will lead the regional wine program, with additional local vineyards also participating.
After a decade overseeing operations at Chaddsford Winery, Krejcik’s dream for Proximity Wine Bar stems from the concept of “enoteca,” an Italian term for wineries offering drinks and small snacks sourced from the immediate community.
With the notable growth of Pennsylvania’s wine industry over recent decades, the time is right for such a space to open in Chester County.
While still in its development stage and without a formal opening date, the wine bar team is halfway to reaching its $600,000 fundraising goal. The team ultimately hopes to offer 20 to 30 wines by the glass, with a diverse portfolio including reds, whites, rosés, and dessert wines.
About the process so far and his hopes for the future, Krejcik said, “Our goal, ultimately, is to absolutely curate the best of what the region has to show. It’s going to show the breadth, the diversity, and the quality that the region has to offer.”
