A.J. Sarno, a Saint Joseph’s alumnus, is putting his biology degree to use behind the scenes at Isgro Pastries, applying science to perfect the art of baking, reports “Chef Nate” Murawski for Saint Joseph’s University Magazine.
“Baking is all chemistry,” he said.
Sarno, who also studied at Drexel University, wanted to become a doctor, but during his studies, he felt a pull toward the family business, where he spent many days working while growing up.
“I never really developed the appreciation for it until I got older,” he said.
The bakery on Christian Street in South Philadelphia was opened by his great-grandfather over a century ago in 1904. Today, Sarno and his older brother, members of the fourth generation, take pride in building long-lasting relationships with both staff and customers.
The bakery has long been a favorite spot for many locals who enjoy its cannolis, rum cakes, and ricotta cookies, among many other popular items.
Even Pope Francis enjoyed the delicious pastries the bakery prepared specially for his trip back to Rome after his visit to Philadelphia for the 2015 Meeting of Families.
