Baby’s Kusina + Market, a new kitchen and market, will soon open its doors in Brewerytown, writes Wendy Daughenbaugh for 6abc.
For owner Raquel Dang, it’s an homage to her mother – whose nickname is “Baby” – and a celebration of her Filipino culture.
The all-day casual kitchen in Brewerytown will serve breakfast, lunch, and dinner. Highlights will include Ensaymada, a traditional Filipino pastry in a housemade brioche, covered in butter and sugar with grated cheese on top.
There are also sweet and savory hand pies stuffed in housemade cream cheese and butter dough.
Other highlights are penakbet, a Filipino vegetable dish made vegan, a Filipino sausage named longganisa, and a breakfast sandwich with banana ketchup aioli.
The menu combined both traditional and modern takes on Filipino cuisine.
Baby’s also has a special coffee program, in which it uses liberica beans, known as Kapeng Barako. According to Dang, they make up just 2 percent of the world’s coffee supply and are rarely found outside of the Philippines.
Alongside her husband, Tam Dang, Baby’s was started in 2018 as a supper club named Tita Emmie’s.
“It became a form of expression and creativity that really represented what it meant for me to be Filipino,” said Raquel.
